Marinated Farmer’s Market Salad with Feta

I made this light and refreshing salad for J’s birthday bbq this weekend and it’s the perfect side to balance out all that meat. The vegetables can be found at your local farmer’s market or grocery store and you probably already have all the other ingredients you need sitting in your pantry.
*Note: Make sure you make this a few hours ahead of time that way the marinade really soaks into the salad.
What You’ll Need:

-3 medium to large tomatoes, cut into chunks
-3 medium cucumbers, peeled and sliced 1/4 inch thick
-1 onion cut into small slices or rings and separated
-1/2 cup feta cheese
{For the marinade} 
-1/2 cup vinegar
-1/4 cup sugar
-1 cup water
-1/4 cup vegetable oil
-2 teaspoons salt
-1 teaspoon crushed black pepper
Chop vegetables and set aside.
Mix ingredients for the marinade until well combined. It’s easiest to use a fork or a whisk.
Pour marinade over vegetables and mix until coated.
Add feta cheese, mix again, and place in the refrigerator for at least one hour before serving.
