Double Berry Crisp

A few weekends ago we had some strawberry and blueberries that needed to be eaten so what better way to use them than in a crisp. I turned to the forgotten allrecipes.com and found this recipe.

Instead of 3 different kinds of berries I just used two (blueberries and strawberries) and I halved the recipe since it served 18 people and we don’t need that much crisp.

What You Need:
-1 cup blueberries
-1 cup strawberries
-2 tbs. white sugar
-1 cup all purpose flour
-1 cup rolled oats
-3/4 cup packed brown sugar
-1/2 tsp cinnamon
-3/4 cup butter
-8X8 pan coated in non-stick spray

What To Do:

1. Begin by pre-heating your oven to 350 degrees. In a large bowl combine flour, oats, brown sugar, and cinnamon,
2. Add in room temperautre butter. Mix until crumbly. I found the best way to do this was to mix it with my hands.
3. In a smaller bowl, add the sugar and cut up berries. Mix until berries are well coated.
4. To avoid a soggy crust, I divided the “crisp” mixture in half and placed half of the mixture in the bottom of the pan. Bake it for approximately 10 minutes at 350 degrees. After 10 minutes, remove the pan from the oven and add the berry/sugar mixture over the bottom layer of crisp.
5. Add the remaining half of the crisp on top of the berries and bake for 40-50 minutes or until the crisp is golden brown.
Serve warm with vanilla ice cream!
