I know. There are TONS of different casserole recipes that include these main ingredients, each varying a little bit from the last. But let me tell you. This is the best one. Hands down. Even Ben requests this at least once a week. This is my go to recipe that I take when I’m bringing dinner to another family and when someone asks me for a quick meal idea. It’s easy, relatively quick, and it is great leftover. What You Need: -1 can cream of mushroom -8 oz. Velveeta cheese -1 cup cooked rice -1 cup chopped broccoli florets- I use the microwave steamer bags -1 cup shredded chicken-I use rotessaire chicken…

Double Berry Crisp
A few weekends ago we had some strawberry and blueberries that needed to be eaten so what better way to use them than in a crisp. I turned to the forgotten allrecipes.com and found this recipe. Instead of 3 different kinds of berries I just used two (blueberries and strawberries) and I halved the recipe since it served 18 people and we don’t need that much crisp. What You Need: -1 cup blueberries -1 cup strawberries -2 tbs. white sugar -1 cup all purpose flour -1 cup rolled oats -3/4 cup packed brown sugar -1/2 tsp cinnamon -3/4 cup butter -8X8 pan coated in non-stick spray What To Do: 1. Begin by pre-heating…

Candy Bar Ice Cream Pie
J’s birthday was last month and after browsing Pinterest for birthday cake ideas, I stumbled across an ice cream cake from Kelli. I tweaked it a little bit, changed the crust, and viola! A delicious and easy ice cream cake. What You Need: -4 to 5 different varieties of candy. Use whatever you like. I used about 4 of the snack size of each candy (M&Ms, Butterfinger, Snickers, Twix) -Vanilla Ice Cream -Pre-made Oreo Crust or you can make your own -Whipped cream (optional) What to Do: 1. Unwrap the candies and chop them into small pieces. I left the pieces somewhat chunky so you get bites of it when you…

Butterfinger Pie
Candy. In a pie. Need I say more. What You Need: -12 mini butter finger bars -8oz package cream cheese -12oz container of Cool Whip -Premade Graham Cracker Crust (you could make your own but who has time for that) What to Do: 1. Combine Cool Whip and cream cheese in a bowl. Make sure your cream cheese is softened or you’ll end up with lumps. 2.Crush the Butterfingers and set 1/2 cup aside. Mix the crushed candy into the Cool Whip and cream cheese mixture. I crushed mine in a ziploc bag but if you wanted to get all fancy you could use a food processor. Make sure you…

Loaded Baked Potato Dip
This is the easiest dish ever and who doesn’t love a good dip! I made this for a work carry in and the bowl was scraped clean. I would recommend doubling this if you are making it for a larger group. What You Need: – 16 oz container sour cream -2 cups shredded cheddar cheese -16 slices bacon, cooked and crumbled (I used a bottle of Hormel’s Real Bacon Crumbles) -A handful of thinly sliced chives. (I left these out because I don’t like them) What to Do: 1. Mix all the ingredients together. 2. Left the dip sit in the fridge overnight and then top with more shredded cheese…
