After seeing this recipe on Pinterest I knew I needed to make it right away. J loves eggs, bacon, and toast, and often piles them on top of each other before eating them anyway so I thought this would be a cute way to serve it. I also think these would be perfect for a brunch.
What You Need:
-Muffin tin
-12 slices of bread
-A dozen eggs
-12 slices of bacon
You could also use turkey bacon, sausage, or even faux bacon strips
What To Do:
1. Flatten the bread with your hand or a rolling pin and cut out an 8in. circle. I just used the rim of a glass we had. You want the bread to stick out of the muffin tin a little bit.
2. Spray the muffin tin with non-stick spray and place the bread in the tin. Lightly butter the inside of the bread.
2. Cook the bacon until it’s almost done. Don’t cook it all the way as it will continue to cook in the oven. Place the bacon over the bread.
3. Crack your egg in the center of the bacon and bread.
4. Bake in the oven at 375 degrees for 20-25 minutes, until the egg is cooked.
