What You’ll Need:
-1/2 lb ground beef
-taco seasoning
-1 cup rice
-1/2 can black beans, drained
-1 small can Mexicorn, drained
-1/2-1 cup shredded cheddar cheese or Colby Jack
-tortilla chips
-toppings (sour cream, salsa, guac, etc)
Serves 4
1. Brown ground beef in a large skillet.
2. While beef is cooking, in a small pot cook rice until done. I like to use the 5 minute rice for fast weeknight meals.
3. Once beef is cooked, add taco seasoning and heat through.
4. Add rice, black beans, and corn to the skillet. You can add more or less of the corn and black beans based on your preference.
5. Cover skillet and cook for 7-10 minutes on low until beans and corn are heated and semi-tender.
6. Serve over tortilla chips and top with salsa, sour cream, and whatever other toppings you like.
