I feel like casseroles do a pretty good job of dividing people. They either love them or hate them and I happen to love them. Except tater tot casserole. Ugh.
Here’s the thing, even if you don’t like casseroles, this Shepard’s Pie is delicious and it’s just as great if not better the next day. Besides being delicious, the other great thing about this dish is that there are only 7 ingredients and it takes 30 minutes to make from prep time to on the table. This is a huge when you’re short on time or you have a one year old crying at your ankles.
What You Need:
-1 can Cream of Mushroom
-1 can tomato soup
-1 can sweet corn (drained)
-1 can green beans (drained)
-1/2 lb ground beef
-8 to10oz of Velveeta (I tend to use 10oz because we’re a family of cheese lovers)
-1 bag Orieda Steam n Mash Potatoes (you could make these from scratch but these taste just as good)
What To Do:
1. Preheat oven to 350F degrees. Empty the canned ingredients into a large bowl.
2. Cook the ground beef throughly and add to the bowl. Mix everything until well combined.
3. Fix the potatoes according to the bag (milk, butter, salt, etc). I tend to add a little extra milk so they aren’t quite so thick which makes them easier to spread.
4. Pour the mixture into a 9x13in dish.
5. Spread the mashed potatoes evenly over the mixture.
6. Slice the Velveeta into thin slices and place on top of the potatoes in rows.
7. Bake for 20 minutes at 350 degrees.
8. Cool for 5 minutes before serving, then enjoy!
