Not only is this a dish that your kids will actually eat, but I made it on a weeknight. A weeknight! After working a full 8 hour day. And honestly, it didn’t require any more effort than our usual Taco Tuesday nights. This recipe is loosely adapted from here, but the great thing about this dish is that you can add whatever veggies you’d like. If you’re a vegetarian you could even sub out the chicken for tofu. What You’ll Need: 4 ounces cooked fettuccini noodles 2 chicken breasts cut into cubes Peanut Oil (can sub olive oil if needed) Snow Peas (can also use edamame, asparagus, sugar snap peas) 1/4…

Triple Berry Popsicles
If you follow me on Instagram, you’ve heard me talk about Kathryn from Do It On a Dime several times. I’m obsessed. Kathryn raved about The Dollar Tree’s popsicle molds and since my boys can go through an entire box of popsicles in one sitting I thought I’d try them out along with a new recipe. These Triple Berry Popsicles are not only delicious and COLORFUL, but the molds are awesome especially for a $1. The best part is they have a straw built into the base so as the popsicle starts to melt you can drink the juice. Genius! What You’ll Need: -Popsicle Molds -1 quart Blackberries, washed -1/2 cup Raspberry…

Strawberry Lemon Sangria
This refreshing, light, and not too sweet sangria is perfect for any occasion and super simple to make. What You’ll Need: (adapted from here) -1 lb strawberries (cut in halves) -2 lemons (thinly sliced, seeds removed) -1 apple; I prefer Honeycrisp (seeds removed, cut in chunks) -4 pack of small (187 ml) bottles in White Zinfandel -1/2 c light rum -4 cups Sprite/Sierra Mist WhatYou’ll Do: Ready for the directions? Cut fruit and add to pitcher or canister. Add wine, rum, and Sprite. Chill and serve. Hard right? I may have caught my husband eating the fruit in the middle of the night. After he drank the rest of the sangria.…

Chewy Cookie Butter Cookies
These cookies make the perfect little snack thanks to their small size and then there’s the fact that they’re made with Biscoff Cookie Spread or cookie butter as we call it. Who doesn’t love this stuff? And they’re surprisingly not sickeningly sweet which means you could eat two or three. What You’ll Need: -1/2 cup salted butter, room temperature -1/3 cup Biscoff Cookie Spread -3/4 cup brown sugar -1/2 cup granulated sugar -1 egg -1 tsp vanilla -1/2 tsp salt -1 tbsp cornstarch -1/2 tsp cinnamon -2 cups flour Preheat oven to 350 degrees. In a mixer, combine butter, cookie spread, brown sugar, and granulated sugar mixing for approximately two…
