    Crockpot Chicken & Black Bean Nachos

    By now you’ve probably heard of (and tried) the recipe for what we call “crockpot chicken.” If not, I’ll tell you it below. And instead of using that chicken to make tacos or burritos, I like to use it to make chicken and black bean nachos.  What You Need: -3 large chicken breasts -2 tbsp taco seasoning -2 cups salsa -Tortilla chips -1 cup black beans (drained) -1 cup shredded cheese (I like Colby Jack) -sour cream, extra salsa, cilantro for topping (optional) What To Do: 1.     Weekend Recap

    This weekend was pretty great. We didn’t get a lot accomplished on the “to do” list, but we spent a lot of time together as a family. On Saturday Ben participated in a mud run for kids. He had a blast and kept asking all weekend if he could do it again next year.  While Ben raced, Jack and his friend Paisley kept themselves entertained by chewing on all the things.     30 Minute Shepard’s Pie

    I feel like casseroles do a pretty good job of dividing people. They either love them or hate them and I happen to love them. Except tater tot casserole. Ugh. Here’s the thing, even if you don’t like casseroles, this Shepard’s Pie is delicious and it’s just as great if not better the next day. Besides being delicious, the other great thing about this dish is that there are only 7 ingredients and it takes 30 minutes to make from prep time to on the table.
