    Black Bean & Corn Enchilada Casserole

    I love me some Mexican food. Do you think there are really people who don’t like? If so, I don’t want to know them. This easy enchilada casserole is not only delicious, but it can be made ahead of time and then thrown in the oven when you’re ready to eat. What You Need: -1 10oz. can of medium enchilada sauce (you could also use mild or hot) -1 8oz. can tomato sauce -1 can sweet corn (drained) -1 can black beans -Half pound of ground beef -8 large soft flour tortillas -2 cups shredded cheddar cheese -2 tbsp. taco seasoning What To Do: 1.     Wedding Weekend in St. Louis

    This past weekend I was in St. Louis for a co-worker/friend’s wedding. Joy was such a beautiful bride and she wore two different dresses which were both perfect. The wedding was at 2:00pm followed by dinner and a reception at the church.  Later that night there was a second reception on the rooftop terrace of the hotel where everyone was staying. Although we had grand plans to party all night, we may or may not have been in bed by 10:00pm. I know. At least we were well rested to head home the next morning and I did surprisingly well for the first night away from Jack. Congratulations Joy!

    One. Tomorrow I’m leaving for St. Louis with this gal and some other ladies from work to attend our coworker’s wedding. We’re staying overnight and it will be my first time away from Jack for more than a few hours. I’m sure there will be a few tears (from me), but I’m excited to get away and I know Jack will be in great hands. Two. I have a new tv obsession. Orange is the New Black is addicting and I find myself staying up way too late to watch it. Netflix has been killing it lately with their original series. Three. I haven’t done a DIY project in awhile…
