These cookies make the perfect little snack thanks to their small size and then there’s the fact that they’re made with Biscoff Cookie Spread or cookie butter as we call it. Who doesn’t love this stuff? And they’re surprisingly not sickeningly sweet which means you could eat two or three.
What You’ll Need:
-1/2 cup salted butter, room temperature
-1/3 cup Biscoff Cookie Spread
-3/4 cup brown sugar
-1/2 cup granulated sugar
-1 egg
-1 tsp vanilla
-1/2 tsp salt
-1 tbsp cornstarch
-1/2 tsp cinnamon
-2 cups flour
Preheat oven to 350 degrees.
In a mixer, combine butter, cookie spread, brown sugar, and granulated sugar mixing for approximately two minutes.
Add in egg and vanilla and mix until combined. While the mixer is still going, add in cornstarch and cinnamon.
Slowly add flour and mix on low until dough is formed.
Roll a heaping tbsp of dough onto a greased baking sheet and bake for 8-10min.
Note* The cookies will hold their shape and do not spread out like traditional cookies.
Place cookies on a cooling rack and enjoy!
