I’ve been on the hunt for a delicious and easy homemade salsa recipe for what seems like forever. I’ve made a green “Chipotle Copycat” salsa which was inedible and last weekend my husband made something that tasted like a runny spicy tomato sauce. Not our best moments. After scouring Pinterest and combining a couple different recipes, I had made a salsa that not only tasted like salsa but was better than most restaurants.

Did you know that when I was pregnant with Jack I couldn’t stand Chipotle? The smell even bothered me. Once Jack was born not only did I start eating Chipotle again but I wanted it all the time. To avoid breaking the bank by eating Chipotle everyday, I thought I’d recreate one of their signature ingredients, the cilantro lime rice. Crispy Fried Onion Straws
There is a restaurant in our town that makes the most delicious onion rings. They are thin, crispy, and highly addicting. After watching an episode of The Pioneer Woman, I adapted her recipe for onion strings to create my own version of onion straws. What You Need: -1 large sweet Vidalia onion -1 cup buttermilk -1 cup flour -1 1/2 tbsp. Lowery’s Seasoning Salt -1 tsp. black pepper -1/2 cup vegetable oil for frying (Serves 2) What To Do: 1.
