I know that Easter has come and gone, but this cake is just too darn cute not to share. Make sure to Pin this adorable cake so you’re ready to go the next time that little bunny comes to town.
What You Need:
-1 large box (5.9 ounces) instant chocolate pudding mix + milk
-1 Tub Cool Whip, thawed
-7 oz shredded sweetened coconut
-Green food coloring
-1 Package Regular Oreos (do not use the double stuffed)
-2 packages of Peeps
-Candy eggs, whichever kind/brand you prefer
-9×13 inch pan
What To Do:
1. Begin by making the pudding according to the directions on the box. Place in the refrigerator until set.
2. While the pudding is thickening, crush Oreos in a food processor or by hand then place in a 9×13 inch pan. I crushed mine using a rolling pin and a ziplock bag.
3. Once the pudding is set, fold in the Cool Whip then spread the mixture on top of the Oreos.
4. Next, place the coconut in a bowl and add a few drops of food coloring. Mix the color in gently with a fork. You want to keep the coconut as fluffy as possible.
5. Spread the coconut over the pudding mixture then add your candy eggs. I ended up using Whooper eggs, but as long as it looks like an egg you can use whatever you like.
6. Finally, place your Peeps in the “garden.” You may need to wiggle them down in the pudding a little bit to keep them from leaning. I recommend waiting to place the Peeps right before serving as they could become soggy if they sit in the pudding mixture too long.
I know coconut isn’t for everyone and most people either love it or hate it. I think you could also make with shredded white chocolate but I haven’t tried it yet. Let me know if you do and how it turns out.

This came out adorable!! I almost made this for Easter this year too but I don't like coconut and didn't feel like whipping up frosting as a substitute haha – definitely wanting to next year after seeing how delicious yours looks!
