We’ve been all about buffalo chicken lately. Over the last couple of weeks I’ve made buffalo chicken dip several times and the other morning J even smothered his hashbrowns and eggs in buffalo sauce.
If you like all things buffalo sauce just as much as we do, then this easy Buffalo Chicken Grilled Cheese Sandwich recipe won’t disappoint. I got this quick and easy recipe from Jennifer over at Life in the Green House. If you haven’t checked out her blog you need to! She posts so many great recipes.
What You Need:
-Shredded chicken (I used a little less than half a rotassire chicken which made two large sandwiches)
-Buffalo chicken sauce (we prefer Franks)
– Shredded mozarella cheese
-Texas Toast bread
What To Do:
1. Start by laying out your bread. I’m sure most of you know what Texas Toast bread is, but just in case you don’t, it’s thicker and a little larger than regular bread.
2. Shred the chicken and place it in a bowl. Add the buffalo sauce to your liking, and mix well.
3. Butter one side of each bread slice and place on a heated skillet.
4. Add enough mozzarella cheese to cover the bread, top with the buffalo chicken, and then add one more layer of cheese on top!
5. Place the other piece of bread on top and cook until golden brown and cheese is melted.
