    Remember how I told you in this post that our car got broken into in St. Louis? Yeah, fun times.  Myself, my parents, and my sister and her family went to St. Louis for the weekend to celebrate both of my niece’s birthdays.     Crispy Fried Onion Straws

    There is a restaurant in our town that makes the most delicious onion rings. They are thin, crispy, and  highly addicting. After watching an episode of The Pioneer Woman, I adapted her recipe for onion strings to create my own version of onion straws. What You Need: -1 large sweet Vidalia onion -1 cup buttermilk -1 cup flour -1 1/2 tbsp. Lowery’s Seasoning Salt -1 tsp. black pepper -1/2 cup vegetable oil for frying (Serves 2) What To Do: 1. Slice your onion into thin rings and then place them in a large bowl and cover with buttermilk. The buttermilk helps take away some of the bite of the onion.…

    Jack: 2 Month Update

    Jack, this past month has been such a delight! I feel like we are finally getting into our groove as a family of four. Just as I knew you would, you have changed SO much this past month. You are a joy to be around and for the most part, a pretty happy baby. You still love to eat and breastfeeding is going strong. You eat every two hours, sometimes less and sometimes more. During the night you usually go 4 hours in between feedings. You have had a few ounces of formula here and there, but 99% of the time you drink breast milk. When I pump, you drink…

    Currently I Am: Listening: To the tv and the dishwasher…and the baby monitor (hopefully he stays asleep). Loving: That my bestie is in town and I get to meet her sweet new baby girl.  Drinking: Water. Although I can’t wait for margaritas with my friend Alissa later this week. Reading: The Pioneer Woman’s blog.  Wearing: A t-shirt and pajama pants. It’s almost bedtime. Thinking about: All the house projects I want to finish, including painting the master bedroom and bath. Feeling: Ready for bed. Eating: Nothin. Wondering if: I’m lame because I want to go to bed at 9:00pm. Realizing: Our baby will be 2 months old tomorrow. Sob.
