Copy Cat Girl Scout Caramel DeLites

Now that the Girl Scout cookies you bought a couple of months ago are probably long gone, these cookies can help tide you over until the next cookie selling season begins.
I will warn you, these are pretty labor intensive, but they are delicious and taste pretty much like the real deal.
What You Need:
Cookie
-1 cup butter melted
-1/2 cup sugar
-1/2 tsp vanilla
-2 tbsp milk (plus more if dough is too dry)
-2 cups flour
-1/4 tsp baking powder
-1/2 tsp salt
-Circle cookie cutter
Topping
-1 bag milk chocolate chips
-3 cups shredded sweetened coconut (make sure to get the sweetened kind)
-12 oz caramel
-3 tbsp milk or cream
What To Do:
1. Preheat your oven to 350F degrees
2. In a small bowl mix softened butter, sugar, vanilla, and 2 tbsp milk. Set aside.
3. In a larger bowl, combine the flour, salt, and baking powder.
4. Add the wet mixture to the dry and mix. If the dough is too dry, add one tsp of milk at a time.
5. Remove dough from the bowl and place on a floured surface.
6. Roll the dough to 1/4 inch thick then use the cookie cutter to cut out circles.
7. To create the hole in the center of the cookie, use a small circle cutter or knife.
8. Bake the cookies at 350F degrees for 8-10 minutes then remove from the oven and place on a rack to cool. Turn the oven down to 300F degrees.
 9. While the cookies are cooking/cooling, melt 1 bag of milk chocolate chips. Once the cookies are fully cooled, dip the entire front of the cookie into the chocolate. Save the extra chocolate for drizzling later. 
10. Once the cookies are dipped, melt 12 oz of caramel and 3 tbsp of milk or cream in the microwave, stirring until creamy. Set aside to slightly cool.
11. Place 3 cups of sweetened coconut on a baking tray and bake at 300 degrees until golden brown. Mine took about 15 minutes, but just keep an eye on it. 
12. Once the coconut is browned, place it in a bowl and add the caramel. Mix well.
13. Top your cookies with the coconut caramel mixture and drizzle the remaining melted chocolate over the top. 
14. Place the cookies in the refrigerator for 30 minutes to fully set then enjoy!
