Copy Cat {Jimmy Dean Breakfast Skillet}

It all started with my husband’s obsession with those skillet breakfasts. If you’ve never had one, they come frozen with potatoes, peppers, and sausage and all you add is the egg. Since they only take about 10 minutes from start to finish they’re perfect for a quick weekday breakfast or a lazy Saturday morning. 
So when I found myself without any in the freezer and a husband who just had to have one, I decided to make my own. And it’s probably no surprise that it blew the frozen skillet out of the water. The best thing about this recipe is that you can add or take out whatever you’d like based on preference or what you have on hand.
What You’ll Need:
-chopped frozen hash browns 
-1/2 lb sausage 
-1 red & 1 green pepper, finely chopped
-1/2 small onion, finely chopped 
-3 scrambled eggs
-2 tbsp oil or vegetable oil
What You’ll Do:
-Heat one tbsp oil on medium; add peppers and onion 
-Saute for two minutes and remove vegetables 
-Add another tbsp of oil and brown potatoes to your desired consistency-we like ours pretty crispy
-While potatoes are browning, cook sausage thoroughly and drain
-Use the sausage skillet to scramble eggs (saves on dirtying more dishes) 
-Once potatoes are done, add sausage, vegetables, and eggs back into the skillet
-Mix well and serve hot
We like to eat ours with toast and ketchup 🙂
