    It all started with my husband’s obsession with those skillet breakfasts. If you’ve never had one, they come frozen with potatoes, peppers, and sausage and all you add is the egg. Since they only take about 10 minutes from start to finish they’re perfect for a quick weekday breakfast or a lazy Saturday morning.  So when I found myself without any in the freezer and a husband who just had to have one, I decided to make my own.
